A couple days in...
We have been eating Paleo for a couple days now and have found that even when we though we knew what was and wasn't Paleo, we were wrong. There are so many variations, so we are sticking with trying to stay natural and whole foods. I ate a steakhouse today for lunch and ate regular potatoes, which I found out later are not on Paleo. My only negative about this is, I don't understand why some things are and why some things are not. I get most items not being good for you, but sheesh. Overall though, I feel good about where we are. We are getting good and looking up alternative recipes for things we already enjoy. I am actually already getting over my major bread craving which really surprises me! Montana overstocks his lunch, because he can really have as much as he wants, but because he is eating so much lean proteins, it's not at much as you would think. I lost a pound in the first 24 hours, but could be that fact that I have been drinking so much water and getting rid of so many bad things(chemicals, additives, etc.) I guess we will see!

Chocolate Chip Banana Muffins
1/3 coconut oil
3 eggs
2-4 tablespoons honey or maple syrup (use less sweetener the more ripe your bananas are)
1 tsp vanilla
1/2 cup coconut flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
60-80% Cacao Chocolate Chips
Prepping for Starters...
We are starting our journey tomorrow A.M. We went to Whole Foods, Walmart and Sprouts to survey what we can and can't get easily around us. Sprouts seems to be the best bet for us. It's a bit cheaper than Whole Foods, but had just as much variety, at least for our needs. We went through our fridge and pantry and gave away about 8 bags of groceries to our family. For us, knowing that if it is in our house that we can eat it, means the world. Simple =effective! We had to "re buy" staples, i.e. flour, oils, etc. that were appropriate for this new way of eating, but hoping starting next week, the dollar signs will balance out.
Prepping will obviously be the key. We did hours of prep today so the rest of the week will be more grab and go. We are using Google a crazy amount at this point trying to figure out what is what and easy swaps for foods we already like, but the good thing is, there is a ton out there.
My husband works at a desk as an I.T. Specialist for a hardware company I am an Operations Manager for a big box gym. We know how to work out, but do not do it consistently.
